Echo Food Rescue started with a simple idea.

What began as a small, grassroots effort quickly showed us how much food is discarded every day, and how powerful a simple, organized response can be. Along the way, we learned that food rescue isn’t about perfection or scale. It’s about showing up, building trust, and creating systems that work for real people, in real communities.

We built Echo by starting small, keeping things simple, and growing only when our volunteers and systems were ready. We made mistakes, adjusted, learned, and kept going. Everything in this guide comes from hands-on experience. From early morning pickups and overflowing coolers to last minute pop-ups and the incredible generosity of donors, volunteers, and community partners.

This playbook exists because we believe food rescue should be accessible, practical, and sustainable. You don’t need to do everything at once. You just need a clear purpose, a few committed people, and the willingness to start.
