Stuffed Peppers

Ingredients:

  • 4 large bell peppers

  • 1 cup cooked rice

  • 1/2 lb ground beef or turkey

  • 1 small onion, diced

  • 1 cup tomato sauce

  • 1 tsp Italian seasoning

  • Salt and pepper to taste

  • 1 cup shredded cheese (cheddar or mozzarella)

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Cut the tops off the peppers and remove the seeds.

  3. In a skillet, cook ground meat and onion until browned. Drain excess fat.

  4. Stir in cooked rice, tomato sauce, Italian seasoning, salt, and pepper.

  5. Stuff each pepper with the meat mixture and place in a baking dish.

  6. Top with shredded cheese.

  7. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until peppers are tender and cheese is bubbly.

 
Pepper Fajitas

Ingredients:

  • 3 bell peppers (any color), sliced

  • 1 onion, sliced

  • 1 lb chicken breast or beef, sliced

  • 2 tbsp fajita seasoning

  • 2 tbsp olive oil

  • Flour or corn tortillas

  • Optional toppings: sour cream, guacamole, salsa, cheese

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add chicken or beef and cook until browned and cooked through. Remove from skillet and set aside.

  3. In the same skillet, add peppers and onions. Cook until tender and slightly charred.

  4. Return meat to the skillet, add fajita seasoning, and mix well.

  5. Serve with tortillas and your favorite toppings.

 
Roasted Pepper Soup

Ingredients:

  • 4 bell peppers (any color), halved and seeded

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 4 cups vegetable or chicken broth

  • 1 cup canned diced tomatoes

  • 1/2 cup heavy cream (optional)

  • 2 tbsp olive oil

  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Place pepper halves on a baking sheet, drizzle with olive oil, and roast for 20-25 minutes until skin is blistered.

  3. Remove skins from peppers and set aside.

  4. In a pot, sauté onion and garlic in olive oil until soft.

  5. Add roasted peppers, broth, and tomatoes. Simmer for 10 minutes.

  6. Use an immersion blender to puree the soup until smooth. (Alternatively, blend in batches in a blender.)

  7. Stir in cream if using, and season with salt and pepper. Heat through and serve.

 

Pepper and Mushroom Stir-Fry

Ingredients:

  • 2 bell peppers, sliced

  • 1 cup mushrooms, sliced

  • 2 tbsp soy sauce

  • 1 tbsp hoisin sauce

  • 1 tbsp olive oil

  • 1 garlic clove, minced

  • 1 tsp fresh ginger, minced

  • Cooked rice or noodles for serving

Instructions:

  1. Heat olive oil in a large skillet or wok over medium-high heat.

  2. Add garlic and ginger, and cook for 1 minute.

  3. Add mushrooms and cook until they begin to soften.

  4. Add peppers and stir-fry until they are tender-crisp.

  5. Stir in soy sauce and hoisin sauce. Cook for an additional 2 minutes.

  6. Serve over rice or noodles.

 

Pepper Salsa

Ingredients:

  • 3 bell peppers (any color), finely chopped

  • 2 tomatoes, chopped

  • 1/2 onion, finely chopped

  • 1/4 cup fresh cilantro, chopped

  • Juice of 1 lime

  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine bell peppers, tomatoes, onion, and cilantro.

  2. Add lime juice, salt, and pepper. Mix well.

  3. Let salsa sit for at least 15 minutes to allow flavors to meld. Serve with tortilla chips or as a topping for your favorite dishes.

 

Pepper Quesadillas

Ingredients:

  • 2 bell peppers, sliced

  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

  • 4 large flour tortillas

  • 1 tbsp olive oil

  • Optional: cooked chicken or beef

Instructions:

  1. Heat olive oil in a skillet over medium heat. Add bell peppers and cook until tender.

  2. Remove peppers from skillet and set aside.

  3. Place a tortilla in the skillet, sprinkle with cheese, and add a layer of peppers (and meat if using).

  4. Top with another tortilla. Cook until the bottom is golden, then flip and cook until the cheese is melted and the other side is golden.

  5. Slice and serve with salsa and sour cream.

 

Grilled Pepper Skewers

Ingredients:

  • 3 bell peppers (any color), cut into chunks

  • 1 zucchini, sliced

  • 1 cup cherry tomatoes

  • 2 tbsp olive oil

  • 1 tsp dried oregano

  • Salt and pepper to taste

Instructions:

  1. Preheat grill to medium-high heat.

  2. Thread peppers, zucchini, and cherry tomatoes onto skewers.

  3. Brush with olive oil and season with oregano, salt, and pepper.

  4. Grill skewers for 8-10 minutes, turning occasionally, until veggies are tender and slightly charred.

  5. Serve with a side of rice or as a topping for grilled meats.

 

Pepper and Goat Cheese Stuffed Chicken

Ingredients:

  • 4 chicken breasts

  • 1 cup cooked bell peppers, diced

  • 1/2 cup goat cheese

  • 1 tbsp olive oil

  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Cut a pocket into each chicken breast.

  3. Stuff each pocket with a mix of diced peppers and goat cheese.

  4. Season the outside of the chicken with salt and pepper.

  5. Heat olive oil in a skillet over medium-high heat. Sear chicken breasts for 2-3 minutes on each side until golden.

  6. Transfer to a baking dish and bake for 20-25 minutes, until chicken is cooked through.

 

Pepper Pasta Salad

Ingredients:

  • 2 cups cooked pasta (penne or rotini work well)

  • 2 bell peppers, diced

  • 1/2 cup black olives, sliced

  • 1/2 cup feta cheese, crumbled

  • 1/4 cup olive oil

  • 2 tbsp red wine vinegar

  • 1 tsp dried oregano

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine cooked pasta, diced peppers, olives, and feta cheese.

  2. In a small bowl, whisk together olive oil, vinegar, oregano, salt, and pepper.

  3. Pour dressing over pasta salad and toss to coat.

  4. Chill before serving to let flavors meld.

 

Pepper Pizza Topping

Ingredients:

  • 1 pizza crust (store-bought or homemade)

  • 1/2 cup pizza sauce

  • 1 cup shredded cheese (mozzarella or your choice)

  • 2 bell peppers, sliced

  • 1/2 tsp dried basil

  • 1/2 tsp dried oregano

Instructions:

  1. Preheat oven according to pizza crust instructions.

  2. Spread pizza sauce evenly over the crust.

  3. Sprinkle with shredded cheese.

  4. Arrange sliced peppers on top of the cheese.

  5. Sprinkle with basil and oregano.

  6. Bake according to crust instructions, until the cheese is melted and bubbly.

  7. Let cool slightly before slicing and serving.
